My first attempts at making pulled pork a year or two ago were extremely delicious, but totally inauthentic. I used, dare I say, a slow-cooker. I needed to figure out how to smoke up some pork shoulders in an authentic wayů on an inauthentic gas grill. You can use wood chunks or wood chips. If you are using wood chips, which I used, you need to create a bunch of foil wood chip packets.
Pulled pork is a delicious contribution to any cookout, tailgate, barbeque or casual lunch at home. It's a classic that can yield as many flavors as it does servings. A Boston butt or Boston pork roast is about 5 to 6 pounds of tough meat filled with bone, cartilage, and fat. Turning this block of a pork roast into delicious and tender barbecue is going to take patience and a full-sized charcoal grill. Plan on a cooking time of 6 to 8 hours from start to finish. Know the weight of the Boston roast you are using.
